I'm Emma Schofield, Associate Director for food science at Mintel. 2021 was all about immune health. The pandemic drew your attention to immunity and our research dating from March 2021 shows that 28% of French and 32% of German consumers have been consuming more food and drink products that support their immune system since the start of the pandemic. Looking forward to 2022, eye health is a key area to watch due to an increase in the amount of time we spend at screens, and this can create opportunities for ingredients that protect consumers eyes, from screen pollutants such as blue light.
