Speaker:man.com, comma, the most popular cheeses in the
Speaker:world. They claim the genetics are the reason why
Speaker:cheese consumption may vary by country.
Speaker:>> Cheesy: Really?
Speaker:>> Fondue: The article claims that most of the world's population
Speaker:is actually lactose intolerant. According to
Speaker:the article, once a child stops getting milk from their
Speaker:mother, the body will actually reduce production
Speaker:of something called lactase. And this is necessary
Speaker:for digesting milk. and it says here, because of
Speaker:varying protein sources in different regions of the world,
Speaker:that people indigenous to any area learn to
Speaker:adapt. Apparently, 95% of Caucasians
Speaker:are lactase retentive.
Speaker:>> Cheesy: What's that mean?
Speaker:>> Fondue: They can continue to properly digest dairy.
Speaker:>> Fondue: It's about 50% for people of african
Speaker:descent and only about 5% of East
Speaker:Asians. And they say here, that's why you almost never find
Speaker:milk, cheese, or dairy in asian foods.
Speaker:>> Cheesy: Wow.
Speaker:>> Fondue: And when you look at the popularity of cheese throughout the
Speaker:world, this actually starts to make sense.
Speaker:>> Cheesy: Yeah.
Speaker:>> Fondue: First of all, in the world, the United
Speaker:States doesn't even make the top ten.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: According to
Speaker:worldpopulationreview.com, there's
Speaker:a chart that actually gives the cheese consumption by
Speaker:country in 2024.
Speaker:>> Cheesy: Whoa.
Speaker:>> Fondue: And this is per pound per capita.
Speaker:>> Cheesy: What's per capita?
Speaker:>> Fondue: Per person.
Speaker:>> Cheesy: Okay.
Speaker:>> Fondue: Um. It's not actually looking at the
Speaker:overall consumption for the country. It's looking at
Speaker:the per person amount. Okay, number ten is
Speaker:the Netherlands at 42.7 pounds
Speaker:per person. Number nine, Estonia.
Speaker:Number eight, Italy. Number seven,
Speaker:Switzerland. Then we have Finland, Greece,
Speaker:Iceland, Luxembourg. Number two is
Speaker:Germany. And number one at
Speaker:57.9 pounds. You guessed
Speaker:it, France.
Speaker:>> Cheesy: Yeah.
Speaker:>> Fondue: The United States comes in at number twelve at
Speaker:36.6 pounds per person.
Speaker:>> Cheesy: Wow.
Speaker:>> Fondue: We've got a few honorable mentions. Okay, we've got number
Speaker:14, Canada.
Speaker:>> Cheesy: Okay.
Speaker:>> Fondue: The UK comes in at number 18 at
Speaker:21.1 pounds. Saudi Arabia
Speaker:is 20th, Russia is 21st.
Speaker:I find this one a little bit surprising, but Mexico is
Speaker:24th with only 8.7 pounds.
Speaker:>> Cheesy: Really?
Speaker:>> Fondue: I mean, Mexico has great cheese, so I don't understand
Speaker:why it's so low.
Speaker:>> Cheesy: Yeah.
Speaker:>> Fondue: Japan is at 28 with only 5.3
Speaker:pounds. China is at 35
Speaker:with 0.7 pounds.
Speaker:>> Cheesy: Oh, wow.
Speaker:>> Fondue: And with all of that paneer, India doesn't even make the
Speaker:top 40.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: Now, if you're talking overall consumption as a country, the
Speaker:United States is looking at
Speaker:5583 kilotons
Speaker:per year.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: And while we don't consume the most cheese, we
Speaker:definitely produce the most.
Speaker:>> Cheesy: Oh, yeah.
Speaker:>> Fondue: According to the Wisconsin Milk Marketing Board, the
Speaker:US leads the world in cheese production at
Speaker:11.1 billion
Speaker:pounds every year.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: The next closest only has
Speaker:4.81 billion. And that's
Speaker:Germany. France has 4.27, and
Speaker:Italy is at 2.55. Of course,
Speaker:the leading cheese producing state is Wisconsin.
Speaker:>> Cheesy: Wisconsin? Yeah.
Speaker:>> Fondue: And it says here, if the state of Wisconsin were a country,
Speaker:it would rank fourth in terms of world
Speaker:cheese production at 2.86
Speaker:billion pounds.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: That's ahead of Italy. And surprisingly,
Speaker:Italy is fourth. But it actually houses the
Speaker:world's most popular cheese, Parmigiano
Speaker:reggiano. The second most popular cheese in
Speaker:the world is Camembert, and that's from France. Uh,
Speaker:and third is Emmental from Germany.
Speaker:>> Cheesy: Whoa.
Speaker:>> Fondue: Now, in order to find out what the most popular cheese in the
Speaker:US is, I've found a couple of different sources.
Speaker:>> Cheesy: Okay.
Speaker:>> Fondue: A poll was conducted in 2021,
Speaker:and it had about 8000 us adults.
Speaker:They asked their favorite cheese tied at
Speaker:five, we have pepper Jack and Colby Jack
Speaker:at 7%. At number four, we have
Speaker:Swiss at 8%. At number three, we have
Speaker:mozzarella at nine.
Speaker:>> Cheesy: Okay.
Speaker:>> Fondue: At number two, we have american at
Speaker:13%. Cheddar is number one at
Speaker:19%. However, according to
Speaker:the USDA, these numbers change. When you
Speaker:talk about per capita consumption.
Speaker:>> Cheesy: Really?
Speaker:>> Fondue: I'm geeking out over a spreadsheet. I've got to
Speaker:be honest, though, it is actually pretty cool. There's two different sections
Speaker:here. There's one from 1970 to 1994,
Speaker:and then there's 1995 to 2022.
Speaker:So there's a lot of data here.
Speaker:>> Cheesy: Yeah.
Speaker:>> Fondue: Our cheese consumption has increased dramatically
Speaker:since 1970.
Speaker:>> Cheesy: Yeah.
Speaker:>> Fondue: Back in 1970, our total cheese consumption,
Speaker:not including american cheese, was
Speaker:11.37 pounds per person.
Speaker:And according to this spreadsheet, in
Speaker:2022, we were at
Speaker:40.14 pounds per person.
Speaker:>> Cheesy: Holy cow.
Speaker:>> Fondue: And if we look back in 1970, cheddar was the
Speaker:most popular cheese. And it was four times more
Speaker:popular than mozzarella, which is
Speaker:today's most popular cheese. Now,
Speaker:our second favorite cheese is cheddar. Out of that
Speaker:40 pounds we consume every year,
Speaker:11.37 pounds of that is cheddar.
Speaker:But mozzarella is coming in at about
Speaker:12.55 pounds per person. The
Speaker:next closest individual cheese is cream cheese at
Speaker:three pounds per person, according to
Speaker:dairyfoods.com. they agree mozzarella is
Speaker:number one. Cheddar is number two. Other American. And
Speaker:again, we're not talking about kraft singles. We're
Speaker:talking about things like Colby, Monterey, and Jack.
Speaker:Then it seems to go provolone, Swiss,
Speaker:Parmesan, ricotta and Hispanic.
Speaker:Muenster and blue cheese, Romano. Other
Speaker:Italian and brick. Manufacturers of
Speaker:mozzarella are not sponsors, but if they were, their
