So the timing of this conversation is [00:00:30] intentional, like all of our conversations. First, for today, it [00:00:35] aligns with this week's episode that highlighted a theme from year one [00:00:40] of Salad with a Side of Fries, which was focus on the fundamentals. And second, [00:00:45] because this summer's cyclospora outbreak had people sending me messages [00:00:50] almost daily wanting to know what to eat, how to [00:00:55] get their greens in, and frankly just wondering if it was safe to eat salad again.

Well, [:

Then [00:01:35] they're typically blanched, which means they're put in boiling water for [00:01:40] a minute or so and then dropped in an ice bath to stop the cooking process. From there, the [00:01:45] veggies are frozen, packaged, distributed, you know, all the rest of the supply chain till they get to [00:01:50] your grocery store's freezer. With this process, if the produce was [00:01:55] contaminated with cyclospora from maybe the irrigation water or [00:02:00] even the water being used to blanch them, the boiling would kill the [00:02:05] parasite.

So frozen veggies can be very economical [00:02:40] and even for some, a way to go for organic options without a much higher price [00:02:45] tag. Now, even if the frozen veggies you get are not organic, they are [00:02:50] more economical than fresh, and they certainly have a longer shelf life. The [00:02:55] blanching of the veggies before they're frozen can help remove dirt [00:03:00] and germs from the skin, and it can also help to [00:03:05] maintain the quality.

Now today, I do think it's worth mentioning that [00:03:35] immediately freezing the vegetables after blanching them, as what happens with [00:03:40] frozen vegetables, locks in the level of nutrients. So [00:03:45] this makes frozen vegetables pretty close to fresh [00:03:50] vegetables in terms of that nutrient density. You'll find studies that say [00:03:55] fresh is more nutrient dense.

To me, that [00:04:40] makes progress the enemy of perfection. So with that said, [00:04:45] 100% read the label. Watch out for those extra [00:04:50] ingredients and additives like salt, sugar, some other seasonings, [00:04:55] sauces, butter, garlic butter. As with everything, be sure you're reading the [00:05:00] label. Okay. So using your frozen veggies. It seems that steaming [00:05:05] them after they're frozen might be the best [00:05:10] nutrient-wise.

So if you overcook them, that's when [00:05:40] they get mushy and lack any flavor. So when you go to use [00:05:45] frozen vegetables, add them directly into whatever you're making. Add [00:05:50] them frozen into the soup, into the stew, into the pan of your [00:05:55] stir-fry. Whatever it is that you're making, add them frozen. If you thaw them first or [00:06:00] cook them separately from the rest of the warm dish that they're going [00:06:05] into, no bueno.

So the bottom line, [:

And as we've [00:06:35] discussed quite a bit this year and through all seven [00:06:40] years of Salad with a Side of Fries, adding more vegetables to your life is associated with [00:06:45] lower risk of many conditions. Think heart disease, [00:06:50] cancer, Type 2 diabetes, and so many more. So the next time you're at the grocery store, [00:06:55] maybe add the freezer section to your usual shop and pick up some frozen [00:07:00] veggies.
