Speaker C:I've been excited to have you on the show for a while.
Speaker C:Pretty much since we started.
Speaker C:I've been trying to, you know, come on, come on, let's.

Speaker C:And I'm glad, you know, we finally got here and it finally worked out schedule wise.
Speaker A:And back when you was level up.

Speaker C:How'd you get here?
Speaker A:What are we.
Speaker C:What are you trying to do?
Speaker A:How did I get here?
Speaker C:Yeah, give it.
Speaker B:Give us the short bio first.
Speaker A:Short bio.
Speaker B:All right.
Speaker A:Actually, when I found coffee, Yes, I was.
Speaker A:I was actually homeless and I always went to Javas because I had a homie there.
Speaker A:He always hooked me up with free coffee, stay warm.
Speaker A:And I saw someone do, like, latte art, and I was, like, very into it.
Speaker A:I was very intrigued by it.
Speaker A:So that spring, I ended up moving back home.
Speaker A:And where's home sodas?
Speaker C:Back out to sodas.
Speaker A:Yep.
Speaker A:Unfortunately.
Speaker A:But a shop opened up out there.
Speaker A:And then I slowly started working there.
Speaker A:And I say after maybe a year, because I just slowly became very interested on how coffee is brewed, how it's roasted.
Speaker A:Finding out that coffee didn't come from Columbia, you know?
Speaker C:Right, yeah, yeah.
Speaker C:Little bits at a time.
Speaker C:Yeah, yeah.
Speaker C:Little bits of knowledge you take on.
Speaker C:Definitely.
Speaker A:And then I ended up getting a DM from Rory at Ugly Dog.
Speaker A:I did not know.
Speaker A:I didn't know specialty coffee like that.
Speaker A:I didn't know it.
Speaker A:So went there, spoke with Roy, and he just showed me, like, a different world of coffee.
Speaker A:And how many black baristas that look like, you know, I mean, that really mix up, like, dead stock coffee out in Oregon.
Speaker C:Absolutely.
Speaker C:Yeah.
Speaker A:I was hooked on it.
Speaker A:I was like, wow, dude, this dude resell sneakers and makes coffee.
Speaker A:That's cool.
Speaker A:And he was wearing.
Speaker A:I saw the first photo, he was wearing, like, a no Limit Soldier masterpiece behind a bar.
Speaker A:I was like, yo, you can take it there, you know?
Speaker C:Yeah, exactly.
Speaker C:So it's not like that in sodas.
Speaker A:Nah, nah.
Speaker A:Unless.
Speaker A:Yeah, yeah, yeah.
Speaker A:I'm not gonna speak on it, but.
Speaker A:Nah, you can't do that out there.
Speaker A:But yeah, yeah.
Speaker A:I just really got fascinated by different coffees.
Speaker A:Especially when I got to.
Speaker A:When I started working at Ugly Duck.
Speaker A:That was like coffee boot camp.
Speaker A:Yeah, it really was.
Speaker A:I never.
Speaker B:What did you.
Speaker B:What coffee knowledge did you have going in at that point?
Speaker B:Nothing.
Speaker B:Just from scratch.
Speaker A:From scratch.
Speaker A:Rory, he, like, he took me to the dish area and he had his laptop, and I sat there and watched how to make a pour over and how to dial in, like, I'll say, maybe two hours.
Speaker B:Just sitting there watching videos.
Speaker A:Yeah, like, all this.
Speaker A:I was like, damn.
Speaker A:I didn't know coffee was all that,
Speaker B:you know, like, you didn't realize you could watch coffee for two hours online?
Speaker A:Yeah, no, like, you know, I mean, like.
Speaker B:No, I'm not lying because, like, Wade and I do watch.
Speaker C:Yeah, we've all done it.
Speaker B:For sure.
Speaker A:For sure.
Speaker C:But no, it's.
Speaker C:That's the life.
Speaker A:Right, Right.
Speaker A:But yeah, yeah, I just got hooked.
Speaker A:And then I remember once how I learned how to steam milk properly.
Speaker A:I did not know I was doing it wrong.
Speaker A:I. Rory made me stay after work for like two hours steaming milk, and that's how I got better at it.
Speaker B:Yes.
Speaker B:Young grasshopper.
Speaker C:Things critiqued.
Speaker A:Yeah.
Speaker C:What was it?
Speaker C:Was there, like, a specific bad habit you had that he didn't like?
Speaker C:Or was it like you were just doing things, kind of overdoing it, making it too hot?
Speaker A:Yeah, yeah, way too hot.
Speaker C:Way Too hot.
Speaker A:Yeah, way too hot.
Speaker A:Because when I first started, they didn't kind of care about it.
Speaker A:I didn't know it was like another level to it.
Speaker C:So several.
Speaker C:Several levels.
Speaker C:Yeah.
Speaker A:Yeah, yeah.
Speaker A:So I kind of got hooked on.
Speaker A:I love what I do.
Speaker B:I mean, you got thrown in the deep end, like, real fast.
Speaker C:Yeah, Ugly Duck is.
Speaker B:But you had like one of the Zen masters sitting there showing you, though.
Speaker B:Yeah, yeah, that'll be intense.
Speaker A:But you know what the crazy part was, though?
Speaker A:It was like a full circle moment.
Speaker A:Because before Rory opened Ugly Duck, he was doing pop ups.
Speaker A:And the first time I had a real cappuccino was from Rory at Kruko.
Speaker B:I don't even know he did a pop up there.
Speaker A:Yeah, yeah.
Speaker B:Was that over on Mount Hope?
Speaker A:No, Park Ave.
Speaker B:Okay.
Speaker A:Who's on park at.
Speaker A:So I'm like, yo, cappuccino.
Speaker A:And it was so good.
Speaker A:I came back and got another one.
Speaker C:Nice.
Speaker C:Yeah.
Speaker A:And I haven't seen him since that time.
Speaker A:And just so happened.
Speaker A:So how did you.
Speaker B:Tell us, how did you get hired at Ugly Duck?
Speaker B:Like, just from that dm, right?
Speaker A:Yeah, just from the dm.
Speaker A:I didn't.
Speaker A:I didn't apply.
Speaker B:So he just like.
Speaker C:He was like, yo, scouted.
Speaker A:He just said, yo, stop by the shop, let me holl at you.
Speaker A:I was like, all right.
Speaker A:Bet that's awesome.
Speaker C:Yeah, that's really good.
Speaker A:That was it.
Speaker A:And then I didn't realize the level Ugly Duck was on.
Speaker A:Cause I was skating after I got hired.
Speaker A:Like a week later, I was skating downtown and I saw a homie.
Speaker A:He was like, yo, congratulations.
Speaker A:I'm like, yo, what the fuck you talking about?
Speaker A:You know what I mean?
Speaker C:Congratulations.
Speaker A:I'm like, yo, you got in the Ugly Duck.
Speaker A:You know, all that's, like, impossible.
Speaker A:I was like, oh, thanks, man.
Speaker A:Cool.
Speaker C:That's awesome.
Speaker A:Yeah.
Speaker A:Yeah.
Speaker C:So then while you're at Ugly Duck, I mean, you.
Speaker C:You all went through lockdown and.
Speaker C:Yeah, kind of came out of that.
Speaker C:And that was when Low phase was really born.
Speaker C:That was the first conversation I had with you about.
Speaker A:Yeah, well, tell us.
Speaker B:Tell us about this.
Speaker A:Like, how did it.
Speaker B:How did it.
Speaker C:How we.
Speaker A:How we.
Speaker C:How we got to Loface?
Speaker A:All right.
Speaker C:He's going to say some things right now, and I just want to preface them with they're true from his perspective.
Speaker A:All right, This.
Speaker A:I don't think I ever seen the Wade's face because we were wearing mask at the time.
Speaker C:Yeah, it was locked down.
Speaker A:Oh.
Speaker A:So all I know is a black
Speaker C:beanie and a man and A black
Speaker A:mask in, like, he'll get a shot of espresso.
Speaker A:And I'm behind the bar, and I'm trying to make the perfect shot for this guy, and it was never good enough.
Speaker A:So I think, what a month went by, and I'm like, yo, why the fuck is he so miserable?
Speaker A:Like, why is he, like.
Speaker A:I always wonder.
Speaker A:I'm like.
Speaker A:So I think it was a Kenya.
Speaker A:And you're not a fan of Kenya on espresso?
Speaker C:Generally, I'm not a fan of Kenyan coffee.
Speaker A:So he was like, wow, this is really good.
Speaker B:And Marvin's doing cartwheels in his head.
Speaker A:Right, right.
Speaker A:I was like, I finally.
Speaker A:I finally.
Speaker A:I finally got him to like it.
Speaker A:And then after he leaves Rory and Joey Clark, he was like, you know what you just did, right?
Speaker A:And I'm like, I don't know.
Speaker A:He's like, dude, like, you got way to, like, a Kenol and espresso.
Speaker A:That's like a milestone, bro.
Speaker A:And I'm like, oh, okay.
Speaker A:You know, like, so a few months later, he walked out, and he was like, yo, how about you start your own coffee company?
Speaker A:I was.
Speaker A:It was covet.
Speaker A:So, yeah, opening a business is, like, the last.
Speaker B:Why would I do this?
Speaker A:Yeah, yeah, yeah.
Speaker A:Mid covert.
Speaker A:So I thought about it, and I used to put, you know, you look at an Instagram reel, and someone's doing latte art, and this is like, mellow, dramatic hipster music.
Speaker C:Oh, yeah.
Speaker A:Yep, yep.
Speaker C:MGMT Entertainment.
Speaker C:Paula.
Speaker A:Yeah, Blood orange.
Speaker A:Yeah, everybody love blood orange.
Speaker A:But, yeah, I started putting, like, Griselda west side Gun, like, while pouring a Tula.
Speaker A:And I went to apologize, like, on Instagram stories and stuff.
Speaker A:And Rory goes like, yo, don't apologize.
Speaker A:This is sick.
Speaker A:Yeah, this is awesome.
Speaker A:And I'm like, all right.
Speaker A:So I kept going.
Speaker A:I kept doing it.
Speaker A:And so I was like, all right, what else do I like?
Speaker A:Skateboarding 90s, that was, like, my era.
Speaker A:So that's how Low Phase was born.
Speaker A:And plus Low Phase, the me, it has a meaning to it.
Speaker A:Like, it's about, you know, finding your strengths at your lowest point.
Speaker A:Okay.
Speaker A:A lot of people can relate to.
Speaker A:Yeah, I just didn't want to just come up with a name and throw it out there and be, oh, it's a brand.
Speaker A:But how can you connect with people?
Speaker A:And I said, we all have these dark moments in our lives.
Speaker A:Just, like, how I found coffee, too.
Speaker A:Huh?
Speaker A:I was homeless, went to coffee shops all the time, and it just naturally snowballed.
Speaker A:That's why I kind of.
Speaker A:I'm so Passionate about it because it's just snowballed into this thing.
Speaker B:Well, it's such a big part of your story.
Speaker A:Yeah.
Speaker B:Like, we talk about coffee finding you or you choosing coffee and coffee chose you.
Speaker A:Yeah, like, I never thought about it like that.
Speaker C:Well, but even beyond that, it's like, I think like, you see a lot of top down coffee.
Speaker C:You see a lot of like the retirees think having a coffee shop is going to be like an easy way to keep steady income.
Speaker C:You see a lot of like the developers, oh, you know, we have this new high rise.
Speaker C:Let's bring in a coffee shop on the ground.
Speaker C:You see a lot of top down coffee.
Speaker C:And to see someone go like coffee from the bottom up, like from my lowest point is, I mean like, that's a totally different form of, of like inspiration.
Speaker C:It really gives people some hope that like, you don't have to be like, you have to have everything figured out in the perfect design and the perfect this and everything.
Speaker C:You just have to bring you.
Speaker C:Because it's like you were saying like you felt like, oh, this isn't how you do coffee.
Speaker A:Right.
Speaker C:But then it was someone saying to you like, you do you and let coffee come along and like.
Speaker C:And I think it's been really cool, like just being part of that journey.
Speaker C:And even just like the coffees that you sel and the ones you drop, like, sometimes they're ones that like I would bring in and sometimes they're ones that I'm like, this is actually like really a challenge for me.
Speaker C:I remember the last Kenya you brought in.
Speaker C:I was like, this is like actually really a challenge for me.
Speaker C:I don't know.
Speaker C:It really was, it was, it was a yeast, yeast inoculated Kenya.
Speaker C:And like, I had never.
Speaker C:That was the first one I'd ever done.
Speaker A:I even struggled with it on espresso.
Speaker C:Yeah, I remember.
Speaker A:Yeah, we had to use that funky ass basket.
Speaker C:Yeah, the worst, the worst portafilter basket I own.
Speaker C:And this guy's like, here, here, check this out.
Speaker C:I think this is working better.
Speaker C:Like, you gotta be kidding me.
Speaker C:It is this janky.
Speaker C:Like, I don't even know if it came with the machine or what.
Speaker C:Like it just.
Speaker C:And he just made his thing.
Speaker C:That was how he got the espresso on.
Speaker A:So made it happen.
Speaker C:It was, it was really cool.
Speaker C:Like, and that's kind of what you've just been doing, just like making it happen.
Speaker C:So, like, you know, if you go to the lofi's Instagram, you're gonna get a lot of skating going to get a lot of coffee going to get a lot of hip hop, that kind of thing.
Speaker C:Like, if you now was talking to you when you started.
Speaker A:Okay.
Speaker C:You now sitting here
Speaker B:when.
Speaker B:When Rory.
Speaker C:Yeah.
Speaker B:Like, when Rory was making you watch videos.
Speaker A:Yeah.
Speaker C:When you started that.
Speaker C:That low phase Instagram.
Speaker C:What.
Speaker C:What.
Speaker C:What do you want to say to you then?
Speaker C:Like, you know,
Speaker A:Keep going.
Speaker A:It'll work out.
Speaker A:I mean, it'll work out.
Speaker C:That's the message, right?
Speaker A:It will work out.
Speaker A:Yeah.
Speaker C:Keep going.
Speaker A:And it's.
Speaker A:Plus, I was.
Speaker A:When I was at my first job, I was also roasting.
Speaker C:Okay.
Speaker C:Yeah.
Speaker A:I was roasting, like, I started roasting, like, a Honduras there.
Speaker B:And was that imprint.
Speaker A:Yeah.
Speaker B:Okay.
Speaker A:Imprint.
Speaker A:And I didn't like the chemistry behind roasting a bean.
Speaker A:I just let that air open for, like, 10 seconds longer.
Speaker B:Okay.
Speaker A:And then people started loving it.
Speaker A:And I'm like, okay.
Speaker A:I don't.
Speaker A:I don't know.
Speaker A:You know what I mean?
Speaker A:At the time, I didn't know.
Speaker A:I just went by how my boss was telling me how to do it, and I just do little tweaks to it.
Speaker A:And then this.
Speaker A:I think American spirits was like, yo, we really like this Honduras.
Speaker A:We want to make a coffee liqueur out of it.
Speaker A:And, you know, that was kind of like, damn, I did something.
Speaker C:You've had some big moments.
Speaker A:I did something.
Speaker A:You know what I mean?
Speaker A:Like, so that kept the fire burning.
Speaker B:So for those of us who don't know roasting, what does leaving the air open do to the roaster, to the beans in the roasting process?
Speaker A:I just.
Speaker A:I just did it.
Speaker B:Yeah.
Speaker A:Like, I just figured, like, maybe this coffee is too.
Speaker A:You know what I mean?
Speaker B:Too roasted.
Speaker A:Yeah.
Speaker A:Too roasted.
Speaker A:So I was like, yo, I'm gonna let the air hit it.
Speaker A:And then it just became.
Speaker A:But my boss didn't know I was doing that.
Speaker A:He didn't know.
Speaker C:He does he.
Speaker C:Is he finding out now if he's listening.
Speaker C:Oh, he never found out.
Speaker A:What's up, Trevor?
Speaker A:I'm sorry.
Speaker A:Sorry.
Speaker A:But, you know, I made it happen.
Speaker C:I made it happen.
Speaker C:Exactly.
Speaker C:Exactly.
Speaker A:I'm not too familiar on roasting.
Speaker C:Yeah.
Speaker A:Until you.
Speaker A:Unless I'm.
Speaker A:I'm with you and you.
Speaker C:Yeah.
Speaker C:Machine that could do a couple of different things.
Speaker C:Yeah.
Speaker C:It could be like, you're saying it
Speaker A:was like an old Turkish machine, too.
Speaker C:Yeah.
Speaker C:Could slow down the process a little bit.
Speaker A:And, like, just, like, timing chain on.
Speaker A:Was old.
Speaker A:It was very old.
Speaker C:It could.
Speaker C:It could, like.
Speaker C:I mean, you could be moving a little extra thermal mass just a little bit.
Speaker C:It could so it could actually be, like, intensifying some of the processes.
Speaker C:It's.
Speaker C:It's a little bit different for every machine and depending on what you mean by, like, leaving the air open, you know, And I would have to actually see it to know exactly what was going on there.
Speaker C:But, like, I mean, it's like.
Speaker C:So I want to talk tasting with you, because I feel like one of the things that, like, you're uniquely good at is tasting, but this microphone's starting to drive me nuts, so I'm actually.
Speaker C:Let's take our first break.
Speaker B:Yes.
Speaker C:And I'll fix this microphone, and then
Speaker B:we'll come back with tasting.
Speaker C:Yeah, we'll be right back.
Speaker C:And we are back with Marvin Gaye, Low face, coffee, hearing all about the story, but I want to talk about the skills, because the skills are unique, and the skills come through.
Speaker C:And, like, tasting with you is always fun.
Speaker C:And, you know, the story I want to tell about tasting is kind of our most recent venture.
Speaker C:I just brought in this anaerobic Kenya.
Speaker C:I don't.
Speaker C:Kenya is the theme tonight.
Speaker C:I don't know what that's about.
Speaker C:Don't really mess with Kenya's as much as this is making it sound like I just brought in this anaerobic Kenya.
Speaker C:First roast was.
Speaker C:Went way too fast and was super flat.
Speaker C:Second roast, lengthened it out, tried to keep some things structured and intact.
Speaker A:They're good.
Speaker C:It's not popping.
Speaker C:Not really wild.
Speaker C:And so you and I got on the table, we tasted through both of them, and then we looked at this curve.
Speaker C:We looked at the two curves and how we wanted to bring them together, what sorts of elements, you know, we want to preserve and what sorts of elements we want to change.
Speaker C:Then I roasted that.
Speaker C:And that, like, not even kidding you.
Speaker C:Was, like, an impossible curve to roast.
Speaker C:It was so I was, like, constantly adjusting and just, like, had to keep my eyes on it at all times.
Speaker C:So it was really wild experience for me.
Speaker C:But, I mean, it just snapped.
Speaker C:It is so right.
Speaker C:And it's really just going from, like.
Speaker C:So Josiah had tasted.
Speaker C:That's the bar manager here at amf, and he had tasted through it and giving me some notes, and I was like, okay, that's a good direction.
Speaker C:I tasted it.
Speaker C:I was like, okay, I have some direction.
Speaker C:And it was like, kind of you confirming a lot of that.
Speaker C:That sent it in, you know, its final direction, the way we built that profile together.
Speaker C:So, like, where does tasting come in for you?
Speaker C:Like, is that something you learned at Ugly Duck?
Speaker C:Is that something you've learned or I mean, for me, it's a skill I have to constantly hone and like, I don't think about anything as much as I think about tasting so like ugly.
Speaker A:The thing is like, me and Rory was so like.
Speaker A:Because crazy part is like, all the dudes I skated with at Krudco when I was a kid, I didn't know they were like friends.
Speaker C:Yeah, yeah.
Speaker A:So like we kind of connected off like hip hop.
Speaker A:Like, I don't know, he listened to hip hop the way like his knowledge on the history of hip hop, you know, so we kind of, you know, we'll get, you know, they'll get a bunch of different coffees in.
Speaker C:Yeah.
Speaker C:Oh yeah.
Speaker A:We'll sit there constantly.
Speaker A:He'll make a pour over some, some that tastes like peanut butter and jelly.
Speaker A:Right?
Speaker A:Like yo it like, so we'll sit taste like for hours just how this shot tastes at these, these numbers.
Speaker A:And I just develop just also too.
Speaker A:I ain't gonna hold you disbelieving what you're tasting.
Speaker C:I think that's a huge barrier.
Speaker B:So tell me, tell me more about believing what you're tasting.
Speaker B:Like, okay, because we just had this, was it Ethiopian aerobic and it was wonderful, right?
Speaker A:Amazing.
Speaker B:I don't know that I could have pulled out a ton of different flavors, but as soon as Wade said cherry cordial, you know those chocolate covered cherry cordials, that was all I tasted after that.
Speaker A:Yeah, yeah.
Speaker B:And so like when you say believe.
Speaker A:Yeah.
Speaker A:You just gotta believe.
Speaker A:Like when I dial in, I'd be like, yo, this is in my head.
Speaker A:I'm not going around like telling everybody.
Speaker C:Yeah, you should.
Speaker A:I just don't, like, I'm just kidding, I'm kidding.
Speaker A:But every time I, you know, I go behind the bar dial in, I'm like, okay, I, I'm gonna put faith into this, this shot and it's going to be good.
Speaker A:And then, you know, people gravitate to what you're saying.
Speaker A:You know what I mean?
Speaker B:They do.
Speaker C:Well, I mean, you don't, I mean, so strictly speaking, you don't just taste with your tongue, you taste with your memories.

Speaker C:So, yeah, I met Lem through competitions, and I'm gonna quick plug what Lem's doing right now.
Speaker C:He's on the board for Grounds for Health, and he's doing a 10k fundraiser for cervical cancer screenings in Ethiopia.
Speaker C:Because 80% of the workforce, the Coffee workforce in Ethiopia is women, and they have to walk 5km to get any kind of medical care.
Speaker C:So 5km there, 5km back, it's 10k.
Speaker C:So he's doing 10k for the fundraiser, thinking we need to reach out.
Speaker C:I'm thinking we need to reach out, and we need to organize one here, because, I mean, I can run a 10k in my sleep, and anyone can walk a 10k.
Speaker B:I was going to say I could train for a 10K.
Speaker C:And there are a ton of.
Speaker C:A ton of run clubs here in town.
Speaker C:And, like, fleet feeds, tight with ugly.
Speaker C:And, like, let's.
Speaker C:Let's hook this up because, like, it's a great cause.
Speaker C:$65.
Speaker C:That's how much one of these cervical cancer screens costs.
Speaker B:It's only three bags.

Speaker C:And I. I don't think I had done my competition set yet.
Speaker C:And I watched his, and I was like, God damn, I'm glad he's in the Other region because, like, it was so intimidating.
Speaker C:And I mean, like, the northeast region is not slouch.
Speaker C:Like, that's all Brooklyn, that's all Philly, that's Boston, that's these huge markets.
Speaker C:But I was way.
Speaker C:I would be way more scared to face.
