Mary Heitmeyer of Chef DeJour gives the Boxcar Universe Family her latest holiday recipe creation for friends and family!

Merry Christmas! Here is an easy and festive recipe that is sure to be a hit.

Preheat the oven to 350 degrees

 Ingredients:

French Baguette (how many depends on how many people – 1 long baguette is good for 4-6 people)

Olive oil, Mascarpone Cheese, Fig jam, Prosciutto, Arugula, Balsamic Reduction Glaze (usually on the condiment or vinegar aisle)

  1.  Slice the baguette into about ½” diagonal slices.
  2. Brush with some olive oil
  3. Place in one layer on a baking sheet and bake until just crispy -watch closely so you don’t overbrown them
  4. Remove and cool
  5. Spread a small amount of mascarpone cheese on the crostini
  6. Spread a small amount of the fig jam on top of the mascarpone cheese
  7. Place a small piece of prosciutto on top of the cheese
  8. Arrange arugula nicely on top of the prosciutto
  9. Drizzle the balsamic reduction in a pretty pattern
  10. Plate and serve.

Happy Holidays!
