I finally pinned down my friend Peter O’Connor, the European Brand Ambassador for the Irish Whiskey Roe and Co, and got him to start from the very beginning.

Our Cocktail of the Week is the Roe & Co Peaches and Cream

Ingredients

• 50ml Roe & Co
• 30ml Fresh peach
• 25ml Lemon juice
• 1 Barspoon of lavender infused honey
• 25ml Egg whites
• Cinnamon pinch
• Chocolate pinch

Shaken and served in a Nick & Nora glass. Garnished with bee pollen, bitters and cut flower.
