Speaker:Apparently, pasteurization is a huge
Speaker:debate worldwide when it comes to cheese.
Speaker:>> Cheesy: Really.
Speaker:>> Fondue: According to cello cheese.com, comma,
Speaker:pasteurization occurs when raw milk is heated to a
Speaker:high temperature, one that's high enough to kill
Speaker:potentially disease causing bacteria. And that's
Speaker:what sort of stems the debate, because a lot of
Speaker:bacteria cultures and enzymes are used to give
Speaker:cheese a unique flavor.
Speaker:>> Cheesy: Oh, yeah.
Speaker:>> Fondue: The reason for pasteurization is simple. According to
Speaker:the FDA, the CDC, and other us
Speaker:agencies, raw milk is unsafe when it's consumed
Speaker:by infants, young children, the elderly,
Speaker:and immunocompromised people. And if you're
Speaker:pregnant, you should not consume pasteurized cheese or
Speaker:milk products. And here's where it gets even more
Speaker:interesting. I thought it was banned all the way across the
Speaker:United States. And in 1987, the
Speaker:FDA did ban interstate sales of raw milk.
Speaker:But unpasteurized dairy products can still be sold
Speaker:within certain states. And apparently, raw milk
Speaker:cheese can be marketed and labeled as raw milk
Speaker:cheese, and it usually is aged around 60
Speaker:days. And that's because dangerous bacteria like
Speaker:listeria can't survive past this period.
Speaker:Farmtoconsumer.org actually has an
Speaker:interactive map of state by state review of
Speaker:raw milk laws. For instance, New Jersey
Speaker:is the only state where raw milk cannot legally
Speaker:be obtained in any way.
Speaker:>> Cheesy: Wow.
Speaker:>> Fondue: The map shows Oregon, a big chunk of the
Speaker:Midwest, New York, Vermont, and
Speaker:Massachusetts, where they have farm to consumer sales.
Speaker:Okay, Florida, Indiana, and Maryland
Speaker:have sale for pet food as legal on this
Speaker:map.
Speaker:>> Cheesy: Whoa.
Speaker:>> Fondue: The United States actually regulates the
Speaker:unpasteurized cheeses a lot more than countries like
Speaker:Italy and France.
Speaker:>> Cheesy: Really?
Speaker:>> Fondue: And in the United States, there are still some
Speaker:unpasteurized cheeses, like brie, camembert,
Speaker:feta, gorgonzola, and queso fresco.
Speaker:Pasteurization can reduce the possibility of
Speaker:foodborne illness, and if you prefer unpasteurized,
Speaker:do so at your own risk.

Speaker:it can, but there's a little bit of a danger when it comes
Speaker:to butter. It can get burnt very quickly, and it
Speaker:can ruin the flavor of what you're cooking.

Speaker:>> Fondue: mayonnaise, on the other hand, is an emulsion of oil
Speaker:and acid, and the egg adds as a binder
Speaker:that brings the two, unlike ingredients, together.

Speaker:solids here because the fat in the mayo can withstand
Speaker:high temperatures. This way, you can take the time
Speaker:that you need to perfect the level of brown on the outside of
Speaker:your sandwich. But then there's another option.
Speaker:They also say here that you could actually
Speaker:use both.

Speaker:>> Fondue: they used equal parts mayo and softened
Speaker:butter and spread it on the exterior of the sandwich.
Speaker:>> Cheesy: Yum.
Speaker:>> Fondue: they said this was a low effort, high reward grilled

Speaker:>> Fondue: We have another debate that's extremely controversial.
Speaker:>> Cheesy: Oh, no.
Speaker:>> Fondue: Which is the correct color for cheddar cheese? Oh, is
Speaker:it white?

Speaker:unnatural. M but that just isn't true. According

Speaker:used in cheese making were ingredients like
Speaker:saffron, carrot juice, paprika, or
Speaker:marigold. And currently, it's annatto.

Speaker:>> Fondue: And it's one of the oldest dyes known to mankind. It
Speaker:even dates back all the way to the Aztecs.

Speaker:>> Fondue: This dye comes from South America, but it can be grown in
Speaker:Mexico, Jamaica, Dominican Republic, Kenya,
Speaker:India, and the Philippines.

Speaker:they didn't like the brightly colored cheeses. So if you're looking for
Speaker:orange cheese in Vermont, you're probably not going to find
Speaker:it. Vermont cheese manufacturers are not

Speaker:Algonquin harbinger have taken up this debate.
Speaker:On one side, we have Maggie del Rey. She's
Speaker:on team peel your cheese. She
Speaker:cites WebMD, that eating slowly
Speaker:allows your body to realize you're full before you've already
Speaker:consumed too many calories. Ben Weber
Speaker:disagrees, and he agrees that the name
Speaker:implies peeling the cheese into strings is the correct method
Speaker:of consumption. But he says biting from the top is
Speaker:actually much more convenient and satisfying.

Speaker:2017, there was a relatively large
Speaker:debate about Google's burger emoji. You
Speaker:see, apple has an emoji, and they have bun,

Speaker:they use a spoon. And apparently 1% of
Speaker:responders said they use something other than a fork
