Apparently, pasteurization is a huge

debate worldwide when it comes to cheese.

high temperature, one that's high enough to kill

potentially disease causing bacteria. And that's

what sort of stems the debate, because a lot of

bacteria cultures and enzymes are used to give

Speaker:

cheese a unique flavor.

Speaker:

the FDA, the CDC, and other us

agencies, raw milk is unsafe when it's consumed

by infants, young children, the elderly,

and immunocompromised people. And if you're

pregnant, you should not consume pasteurized cheese or

milk products. And here's where it gets even more

interesting. I thought it was banned all the way across the

Speaker:

United States. And in 1987, the

FDA did ban interstate sales of raw milk.

Speaker:

But unpasteurized dairy products can still be sold

Speaker:

within certain states. And apparently, raw milk

Speaker:

cheese can be marketed and labeled as raw milk

Speaker:

cheese, and it usually is aged around 60

Speaker:

days. And that's because dangerous bacteria like

Speaker:

listeria can't survive past this period.

raw milk laws. For instance, New Jersey

is the only state where raw milk cannot legally

Speaker:

be obtained in any way.
