Poitin isn’t something to hide behind all the other bottles anymore. Gary Mcloughlin and his fellow co-founders of Glendalough Distillery in Wicklow, Ireland knew it was to be the first spirit that they had to make when establishing Ireland’s first craft distillery. If you don’t know what it is, then now is your chance to find out.

Poitin is the traditional spirit of Ireland and after years if it being illegal, it’s finally out in the open being enjoyed along with all the other award-winning gin and whiskey that Glendalough Distillery has created.

Come along with me to Wicklow, the garden of Ireland, to hear the legend of St. Kevin and how he inspired Gary and his friends even before Glendalough has produced even one drop of spirit.

Our Cocktail of the Week is Galway In Spring.

Created by Jonathan Kahn for the J Parker in Chicago but you can easily make this one at home!

Ingredients:

  • 1.5 oz Glendalough Double Barrel
  • .25 oz Chartreuse Green
  • .25 oz Mint syrup
  • .5 oz Lemon juice
  • Topped with a splash of soda water
  • Mint Sprig

Method:

Measure out all ingredients and pour into a shaker. Add ice and shake vigorously for 8-10 seconds. Strain through a Hawthorne strainer into a tall glass. Add fresh ice and top with soda water. Add a fresh mint sprig for garnish.
